High Protein Low Carb Pancakes

Ingredients:

  • 2 cups of coconut flour
  • 3 scoops of AdvoCare Vanilla Whey Protein
  • 3 tablespoons of brown sugar
  • 1 tsp baking powder
  • ¼ tsp cinnamon
  • 2 whole eggs
  • 1 tsp vanilla essence
  • ½ cup coconut milk
  • ⅓ cup unsweetened apple sauce
  • 1 cup fresh diced pineapple
  • 3 tablespoons sweetened shredded coconut

Serves: 12
Calories per serve: 156
Macros per serve: 10P/4F/15C

Method:

  1. Preheat your oven to 180 degrees C / 350 degrees F
  2. In a large bowl mix all ingredients together until until fully combined
  3. Place cupcake linings into a 12 hole cupcake tin
  4. Spoon the mixture evenly into the cupcake tin
  5. Place in the oven and cook for 15mins or until golden brown on top
  6. Once cooked, remove from the over and allow to cool for 5 mins in the cupcake tin
  7. Transfer cupcakes to a wire rack to continue cooling
  8. Top with your frosting of choice (not included in macros) or eat with no frosting
  9. Enjoy!
