Low Fat Chicken Satay Sticks

Ingredients:

    For the Chicken + Marinade

    • 600g chicken breast (cut into tenderloin sized pieces)
    • 1 teaspoon of crushed garlic
    • 3 tablespoons of soy sauce
    • 1pinch to 1teaspoon of dried chilli flakes (amount depends on how hot you would like it)
    • 1 tablespoon of honey
    • 1 tablespoon of extra virgin olive oil or rice bran oil

    For the Satay Sauce

    • 6 tablespoons of powdered peanut butter, any brand
    • 1 teaspoon of crushed garlic
    • 1 tablespoon of sweet soy sauce
    • 1pinch to 1teaspoon of dried chilli flakes (amount depends on how hot you would like it)
    • 1 tablespoon of brown sugar
    • water
    • crushed peanuts (optional)

Method:

    1. Combine all ingredients of the marinade in a large bowl (including chicken) and mix with your hands until all chicken is coated
    2. Set aside
    3. Pre heat your oven to 180g celsius and line a baking tray with baking paper
    4. Place in the oven to cook for 10mins
    5. While the chicken is cooking, prepare the satay sauce
    6. Add powdered peanut butter, garlic, sweet soy sauce, chilli flakes and brown sugar in a bowl and mix until combined, the mixture will be very thick so add some water (a tablespoon at a time) and continue mixing until it has a “Satay Sauce” like texture
    7. Take the chicken out of the oven and arrange on a plate
    8. Drizzle with sauce and then place the excess sauce in a bowl to use as a dipping sauce
    9. Enjoy!
